Radish leaves are not usually used, but that would be a shame because they can make an interesting pesto. See how.
Ingredients
- 2 bunches of radishes
- 4 garlic cloves (for those who prefer less garlic, I recommend only 3 cloves!)
- 7-8 tablespoons of cold-pressed oil (olive, sunflower, etc.)
- a little salt to taste
- a little pepper to taste
- 1 teaspoon crushed walnuts or pine nuts
Preparation
- Wash the radish leaves well
- Cut the radish leaves into really small pieces
- Add the olive oil, garlic, and nuts to the chopped radishes
- Blend the whole mixture well in a blender until you get a paste consistency
- Finally, season the resulting pesto with salt and pepper
