Pesto from radish leaves: A simple recipe

Radish leaves are not usually used, but that would be a shame because they can make an interesting pesto. See how.

Ingredients

  • 2 bunches of radishes
  • 4 garlic cloves (for those who prefer less garlic, I recommend only 3 cloves!)
  • 7-8 tablespoons of cold-pressed oil (olive, sunflower, etc.)
  • a little salt to taste
  • a little pepper to taste
  • 1 teaspoon crushed walnuts or pine nuts

Preparation

  1. Wash the radish leaves well
  2. Cut the radish leaves into really small pieces
  3. Add the olive oil, garlic, and nuts to the chopped radishes
  4. Blend the whole mixture well in a blender until you get a paste consistency
  5. Finally, season the resulting pesto with salt and pepper
